Stern and cold, Gertrude is the orphanage’s headmistress, although the kids may just view her as 
“the cafeteria lady”.  While her demeanor is cool, she cares a lot more for the orphans than she lets on. Having taken care of them since the very start, Gertrude almost sees them as kids of her own - not that she would ever share this fact with them. 
She also deeply cares for the Director, though these days it’s proving harder to keep those feelings up.
